A quick and easy one pot pasta dish for a weeknight supper or a
dinner party with friends.

 

Makes 4 servings

Ingredients:

1# - bucatini pasta or any other pasta you prefer

1/2 - 3/4 Cup full belly oil free giardiniera mild or hot drained
               and brine reserved (we prefer mild for this wonderful
               dish)

3 - Tbsp brine from the jar

1/4 - Cup extra virgin olive oil

1 - Pint cherry or grape tomatoes cut in 1/2

Parmigiana Reggiano or the good Parmesan Cheese

Kosher salt

Fresh basil leaves rinsed and patted dry for garnish

 

Method:

Cook pasta al dente per package directions then drain in a colander and return to the pot it was cooked in over a low light

Add the giardiniera, brine and olive oil, stir gently until well mixed then add the halved cherry tomatoes and very gently stir until warmed through.

Taste the pasta and season with kosher salt to taste

Divide the pasta between 4 warmed plates

Grate Parmesan Cheese over the pasta on each plate and garnish with the basil 

Serve additional Parmesan at the table
